Don't you just love spring?!?! There is so much to celebrate! The birds are singing, the buds are blossoming, it stays light later and on the 5th of may we celebrate Mexico's independence.

Yes, each Cinco de Mayo the festive tune of mariachi music makes me want to gather friends, to shake our maracas, and to drink margaritas.

Be one of those people who likes to host fiestas with flair! Create atmosphere and have a theme. That's why I love Cinco de Mayo; it's an easy hit. All it takes to create that south of the border experience are some maracas to hand out, sombreros to put on guests' heads (and hang on the door/walls) and colorful paper goods.

Mix up some margaritas(rim the glass with salt), chips, and homemade salsa (or ,of course, you can just throw out the jars before your guests arrive- i won't tell) and then you'll have authentic Mexican! the perfect way to party the night away.

Recipe for the perfect Cinco De Mayo party
a group of good friends
mariachi cd
maracas
sombreros
festive and brightly colored paper goods
margaritas
chips and salsa and bean dip

follow recipes below, start CD, decorate with sombreros on door/walls, when
Friends arrive hand out sombreros and maracas, and celebrate!

recipe for the perfect margarita

1.5 oz of Tequila
3/4 oz of Triple Sec
Splash of Sour Mix and a dash of Lime Juice to taste
Blend with ice & serve in a salt trimmed Margarita Glass
Garnish with a wedge of lime

recipe for the perfect salsa

4 to 5 plum tomatoes, quartered and seeded
2 garlic cloves, chopped
1 small jalapeño pepper, seeded and sliced
3 tablespoons lime juice
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup fresh chopped cilantro

Process first 6 ingredients in a blender or food processor until smooth, stopping to scrape down sides. Stir in cilantro. Chill until ready to serve.
Makes 1 3/4 Cups

(to be eaten with chips)
1 can black beans(drained/rinsed)
1can corn (sweet corn drained)
1 box cherry or grape tomatoes cut in half or 1/4
2 tablespoons salsa
